On Wednesday, we had the privilege to dine at Aburi Sushi Heshirou as well as meet Hiromasa Kobayshi-san, the CEO, to find out more about the sushi restaurant and its specialty. At the entrance, we were greeted by Kobayashi-san and Hayato-san, who was very kind to serve as our interpreter.
Kobayashi-san went on to tell us about the origins of the sushi restaurant. It is a relatively young restaurant, having been founded on 10th September 2016. Yet, in Japan, the Heishirou establishment owns a chain of 5 sushi restaurants as well as two bread shops.
Aburi Sushi Heishirou was initially intended to be a restaurant that only catered to making aburi sushi. However, the menu has since been greatly expanded to fit the insatiable tastes of Singaporeans.
After the insightful introduction, we were then treated to a delightful dinner of the restaurant’s specialty.
The first thing that caught my eye was the large bowl resembling a cauldron, with mist seeping out from the crevices between the cover and the bowl.
Kobayashi-san then did the honour of lifting the cover, to which we anticipated greatly, with our smartphones of course. What lies beneath was a beautiful, vibrant assortment of mini bowls & platters of food, ‘floating’ around the veil of mist.
We learnt that this assortment is known as “Gozen” which is a variant of “teishoku (定食)”; a staple in Japanese cuisine. The mist concept was an idea incorporated by the restaurant, using the classic dry-ice-in-water technique. This indeed goes to show that the creativity of Japanese hospitality knows no bounds.
The restaurant was also generous enough to treat us to two chirashi dons as well as a seafood chawamushi, each filled with their own bounties of the sea. We were told that by simmering the chawamushi together with the seafood for 20mins, the seafood taste becomes more distinct in the entire dish.
Needless to say, the food tasted amazing. Besides the aesthetically pleasing and dare I say, Instagram-worthy dishes, the seafood was fresh and the side dishes proved to be a great complement. I especially loved the sirloin steak in the gozen, it was so tender and juicy!
